Heat some oil in a frying pan and fry the chicken skin side down until browned, about 3 minutes. Turn over and put on a lid, and steam-fry for about 6 minutes. Remove any excess oil from the pan.
Add the ◎ ingredients to the pan and simmer over low heat.
If the sauce has reduced about this much it's good. Slice the chicken on the diagonal. Pour the sauce remaining in the pan over the chicken, and bon appetit.
