Soak the rice for 15-20 minutes. Rinse well, drain and set aside.
In a deep pan heat the ghee/ vegetable oil. Add in bay leaves, cardamom, cinnamon and cloves. Saute for a minute or until fragrant.
Now add the rice and salt to taste. Mix well.
Add water and bring it to a rolling boil. Reduce the heat to low. Cover and cook for 18-20 minutes or until the water is completely absorbed.
Remove from heat and let it sit covered for about 5 minutes.
Fluff with a fork, top the rice with mint leaves & pomegranate seeds and serve immediately.
