    1. Prepare 1/2 kg potatoes
    2. Make ready 1/2 kg bringals
    3. Prepare 3 Onions Slices

    5. Take 1 inch ginger piece
    6. Take 2 tomatoes
    7. Make ready 3 tbspn yogurt
    8. Make ready 1/2 cup Oil
    9. Prepare 1 tsp Salt (as per taste)

    11. Take 1/2 tsp turmeric powder
    12. Take 1/2 tsp black pepper powder
    13. Make ready 1 pinch black seeds
    14. Take 1 tsp roasted crushed cumin
    15. Make ready 1 tbspn roasted crushed coriander
    16. Take 1/2 tsp garam masala powder
    17. Prepare 1 tsp lemon juice
    18. Take 3,4 green chillies
    19. Take Fresh coriander leaves chopped
    20. Prepare Water as required

    Instructions

    Steps to make Aloo Baingan ki Sabzi:

    1. Wash potatoes and bringals. Peel the skin of potatoes and bringals. Cut them to thin quarter and add them to a bowl filled with water and little salt.
    2. Add oil to a hot pan, Add onions and fry till golden brown.
    3. In blender add fry onion, tomatoes, green chillies,garlic cloves and ginger purée it.
    4. In remaining oil add blended mixture. After that add red chillies powder,turmeric powder,cumin seeds, coriander powder,black seeds,black pepper, salt, garam masala powder and yogurt cook well.
    5. Cook until the masala begins to leave the sides of the pan.
    6. Drain the water from potatoes and bringals. Add them to the pan. Sauté well for 2 to 3 minutes. Cover and cook on a medium heat for another 2 to 3 minutes.
    7. Add water just enough to make a thick gravy. Cook covered on a low to medium flame until the potatoes and bringals are cooked completely.
    8. Taste the veggies and add 1 tsp lemon juice, more salt, garam masala if needed. Allow to simmer for 2 to 3 minutes.
    9. Add chopped fresh coriander and garnish with whole red pepper.
    10. Serve aloo baingan with rice and roti.
