    Wash and drain spinach in colander and keep aside. Boil moong dal, in plenty of water, till soft but not mushy. Moong dal methi sabzi is a dry accompaniment to rotis and chapatis. Healthy methi leaves with moong dal is a quick sabzi which suits people of all ages.

    Instructions to make Moong dal badi ki sabzi:

    1. First in a pan fry all moong daal badi until slightly change in colour on medium heat.keep aside.
    2. In a blender jar add tomatoes, green chillies, ginger and blend them to Puree.
    3. Now heat a pan/wok with oil, once oil heated add cumin seeds,hing and curry leaves,stir for few seconds.now add chopped onion and cook until slightly pink.add coriander powder, turmeric powder,red chilli powder, stir well.
    4. Add tomato paste and cook until oil comes on the surface.add chopped potatoes and fried daal badi and saute well.
    5. Cover the pan and cook on low flame until done.add as required water to adjust the consistency of gravy and cook for few more minutes.in last add fresh coriander leaves and garam masala powder mix well and serve.

    To make moong dal methi sabzi, first soak moong dal and then drain the water and cook it in just enough water.
