Steps to make Spinach Corn Quesadilla:
Let's start with our Spinach Tortilla. - Take a bowl to add Maida, whole wheat flour, baking powder, salt, and oil and mix well. Now add spinach puree and knead a soft dough. Cover with damp cloth and rest for 15 mins.
After rest of dough knead it again little and then divide into 14 equal parts. Now dust and roll each part make an 8-10 inch disc, not too thin, not too thick. Heat the Tawa, place the Tortilla and cook from both the sides until brown spots appear. Take it out and wrap it in a kitchen towel.
For Spinach Corn Quesadilla: - Take a pan to add oil and corn fry for 3mins., add chopped spinach and cook until it becomes dry on medium-high heat. Then add salt, oregano, chilli flakes, black pepper and mix well. Then shift into a bowl.
Now take the pan again and add butter let it melt, then add Maida and cook for 2-3 mins., on medium heat. Now add milk and keep mixing, then add black pepper and mix it becomes thick.
Turn off the heat and pour it into corn bowl and mix well. Now add mozzarella cheese and give a mix again.
Now take our spinach tortilla wrap and spread the cheesy mixture on half and fold it and give little press.
Now heat Tawa brush some oil and place our tortilla and cook from both sides till we get a golden colour, apply oil in both sides. - Spinach Corn Quesadilla is ready to cut into half and serves hot.
