    Ingredients

    The ingredients needed to make Litti Chokha:

    1. Take For Litti -
    2. Prepare 250 gms Wheat flour
    3. Make ready 1 tsp Carom seeds
    4. Get 1/2 tsp Salt in flour
    5. Prepare 100 gms Sattu flour (can made at home by grinding Phutana dal)
    6. Take 1 tsp ginger garlic green chilli paste
    7. Prepare 1 tsp Mustard oil (raw)
    8. Get 1/2 tsp Onion seeds
    9. Prepare 1/2 tsp red chilli powder
    10. Take 1/2 tsp Salt in sattu Filling
    11. Prepare 1 tbsp coriander leaves finely chopped
    12. Prepare 1 tbsp water for adding in sattu Filling
    13. Make ready as required water for Kneading dough
    14. Make ready 1 tbsp oil as moyin
    15. Prepare As required Ghee for deep frying littis
    16. Take For Chokha:
    17. Get 2 Big aubergine (Bharta Baingan)
    18. Take 2 Potatoes (medium size)
    19. Get 8-10 Garlic cloves
    20. Make ready 1 inch Grated Ginger
    21. Prepare 3-4 green chillies
    22. Make ready 2 Onions chopped
    23. Take 2 Tomatoes chopped
    24. Make ready 1 tbsp Mustard oil
    25. Take As per taste Salt
    26. Get Handful chopped coriander leaves
    27. Prepare For Dal -
    28. Take 1 cup Toor dal
    29. Take 1 onion finely chopped
    30. Get 1 Tomato finely chopped
    31. Prepare 2-3 Garlic cloves finely chopped
    32. Take 1/2 inch Grated Ginger
    33. Prepare 2-3 Green chillies slit into halves
    34. Make ready 4-5 - curry leaves
    35. Get Handful Coriander leaves finely chopped
    36. Prepare 1/2 tsp Turmeric powder
    37. Take 1/2 tsp Cumin Seeds
    38. Get as required Ghee for tadka
    39. Make ready 2-3 Dried red chili for tadka
    40. Prepare for Green Chutney-
    41. Take 1/2 bunch Pudina leaves
    42. Get 1/2 bunch Coriander leaves
    43. Take 2-4 Green chillies
    44. Prepare 2-3 garlic cloves
    45. Make ready 1/2 inch ginger
    46. Get As per taste salt
    47. Prepare 1 tsp Cumin Powder
    48. Make ready As required water
    49. Prepare For Serving -
    50. Prepare As required chopped onions
    51. Make ready As required Green chillies

    Instructions

    Instructions to make Litti Chokha:

    1. Sattu Filling for litti-
    2. Take 100 gms of sattu flour in a bowl, add ginger garlic green chillies paste, chopped coriander leaves, salt, onion seeds, Mustard oil and water. Mix well sattu filling for litti is ready (one can also use any Mustard oil based achari masala) if it's available easily. Keep this filling aside.
    3. For Litti covering-
    4. Take wheat flour in a bowl, add salt, carom seeds and oil moyin. Now start adding water and knead a dough same as required for Chapati Dough (not too loose not too tight). Rest this dough by applying oil for 15 mins. After 15 mins knead again. Litti covering is ready.
    5. Litti frying -
    6. Take a lemon size portion from dough now with help of finger press it and make a Katori.
    7. Now, take 2 tsp of sattu filling and fill it in that katori. Seal the dough and give it a round shape with the help of your palm. Seal it properly so while frying our littis will not open in ghee.
    8. Prepare all littis in similar fashion and keep it ready for frying.
    9. Now heat ghee in a kadahi. Start adding littis in batches. Please note that throughout the frying process the gas flame will be low. Flip the littis once they are golden brown from once side. Similarly fry all littis and take out on tissue paper. Littis are ready.
    10. For Chokha-
    11. Pressure cook aubergine and potatoes by peeling them. Take one whistle. Discard the water and start mashing potatoes and aubergine together with the help of a Smasher.
    12. Heat Mustard oil in a kadhai. Add chopped onions, chopped garlic cloves, grated ginger and chopped green chillies. Saute well till raw aroma disappears. Now add chopped tomatoes and saute till tomatoes are soft and mushy.
    13. Add turmeric powder and salt. Now add smashed potatoes and aubergine. Mix well and adjust Salt. Cover and cook for 5 mins.
    14. Switch off the flame add raw garlic cloves roughly chopped from above, add raw Mustard oil around 1 tbsp. Add chopped coriander leaves. Chokha is ready to be served.
    15. For dal-
    16. Pressure cook toor dal for 3-4 whistles by adding salt and turmeric powder.
    17. Heat oil in a kadhai. Add cumin seeds let it splutter, now add curry leaves, dried red chillies, mix well, now add chopped garlic, grated ginger, chopped green chillies, add chopped onions and saute well. Once onions are pink add tomatoes. Cook till tomatoes are tender.
    18. Add cooked toor dal and give it a good mix. Let it boil on low flame for 10 mins and add coriander leaves. Add ghee from above. Dal is ready.
    19. Green Chutney -
    20. In a mixer jar add - washed pudina leaves, washed coriander leaves, green chillies, garlic cloves, ginger, salt, cumin powder and water. Blend to make a smooth Puree. Green Chutney is ready
    21. Serving Litti Chokha-
    22. In a plate arrange - crushed littis + add some ghee from above, chokha, tempored dal, green chutney, chopped onions and green chillies.
