    1. Make ready 1 packages firm tofu

    Steps to make Fried tofu in lemongrass:

    1. Open and drain water out of tofu package. Use paper towels to firmly squeeze dry the tofu. Any water on tofu will pop and splatter all over when frying.
    2. Sliver diagnally on one side of tofu, not too deep, flip and slice opposite diagnally on the other side. Optionally can make slits all around. Put on plate.
    3. In small bowl, add lemongrass, salt, hot pepper, tumeric. Mix well. Wear gloves to gently put mixture in slits of tofu. Tumeric will stain hands.
    4. Can let it sit in fridge to marinate it better, or just fry it if in a hurry. Flip tofu on both sides when frying. Serve with rice and vegetables. (I like to leave it in bag to marinate and fry only what i plan to eat)

    Even though lemongrass is one of my favorite flavors, this was actually the first time that we cooked with it. We like to enjoy this with garlic fried rice, steamed vegetables, steamed spinach and cucumber. Tofu is marinated with a lot of minced lemongrass and bird's eye chili before being fried until golden, crispy and fragrant. With the addition of lemongrass and hot chili pepper, the fried tofu becomes aromatic with a nice kick. Crispy pan-fried tofu is drenched in lemongrass sauce, caramelized and served over rice with veggies and rich peanut sauce to make these flavor-packed Buddha bowls.
